You know, I actually think that they think of it as a physical essence too. I've seen shows where the chef instructs people on extracting umami from meat, seaweed, fish parts (for broth), etc. They describe it with physical sounding words sometimes. Very abstruse. Interesting.
Wait up - it's glutamic acid? Glutamate? As in monosodium glutamate? The world famous MSG? Ha ha ha.

Haha you're right! I just looked up some glutamic acid in wikipedia and here's what they say
"As a source for umami, the sodium salt of glutamic acid, monosodium glutamate (MSG) is used as a food additive to enhance the flavor of foods, although an identical effect can be achieved by mixing and cooking together different ingredients rich in this amino acid and other umami substances as well."
